Easter Made Easy: 3 Simple Recipes

Here at Maxwell & Williams, we love an easter egg just as much as the next person... but often the most memorable part of the Easter weekend is time spent with friends and family around the table with a feast to savour.
Serve these three crowd-pleasing recipes to your friends and family this Easter. Enjoy!
EASTER HAM RECIPE

Prep time: 15 mins
Cooking time: 2hrs 45min
Serves: 8+
Ingredients:
2.5-3kg ham
1 orange, cut in half
1 small pineapple, cut lengthways into eighths
1 cup honey
1 cup soft brown sugar
300mls freshly squeezed orange juice
1 star anise
1 cinnamon stick
Method:
- Preheat the oven to 180°C.
- Score rind around knuckle of ham. Run fingers between rind and fat to gently separate. Dispose of rind and wrap the exposed rind around the knuckle with foil to protect from burning.
- Using a knife, gently score fat in diagonal lines in one direction, followed by the other to create a diamond pattern.
- Place ham into an oven-proof dish along with orange and pineapple pieces.
- Place honey, soft brown sugar, orange juice, star anise and cinnamon stick into a medium sized saucepan and bring to the boil stirring occasionally.
- Reduce heat and simmer for 20-30 minutes or until mixture is reduced down to two thirds remaining. Transfer into a Maxwell and Williams 1.5L mixing bowl and allow to cool for 15 minutes.
- Using a pastry brush, baste ham and fruit liberally with glaze and roast in oven for 1 hour. Repeat basting and bake for a further 15 minutes. Repeat step three times. Remove from oven and allow to cool a little.
- Transfer ham to your favourite Maxwell & Williams Platter. Remove foil from around knuckle and wrap with baking paper, ribbon and florals or herbs.
- Serve warm or allow to cool completely and store in fridge.
WEDGES WITH SOUR CREAM & PESTO

Prep time: 10 mins
Cooking time: 40 mins
Serves: 4–6
Ingredients:
1-1.5kg washed potatoes, chopped into wedges with skin left on
4-5 tbsp olive oil
Salt and pepper
100ml sour cream
100ml basil pesto, store bought
Handful of fresh basil leaves
Method:
- Preheat oven to 200°C. Place the chopped potatoes into your oven proof baking tray.
- Add the olive oil and season with salt and pepper. Toss together.
- Place into the oven and roast for approx. 30-40 minutes or until the potatoes are cooked through and golden. Tossing several times throughout cooking.
- To serve, sprinkle with extra salt flakes and garnish with generous dollops of sour cream, pesto and fresh basil leaves.
EASTER BISCUITS
Use your favourite Easter cookie cutter and bake some sweet biscuits with your loved ones. Add white royal icing on top. Wait for the icing to dry completely, then tie with string and you have some elegant Easter biscuits to eat, gift or use as table décor.
