Hot Cross Buns Recipe
Ingredients
Dough:
· 4 cups cake flour
· 2 tsp instant yeast
· 1/4 cup sugar
· 1/2 tsp salt
· 1 tsp ground cinnamon
· 1/2 tsp ground nutmeg
· 1/2 cup raisins or currants
· 1 1/2 cups warm milk
· 1/4 cup melted butter
· 1 egg
For the cross:
· 1/2 cup flour
· 1/3 cup water
For the glaze:
· 1/4 cup apricot jam
Method
1. In a large bowl, combine flour, yeast, sugar, salt, cinnamon, nutmeg, and raisins.
2. Add warm milk, melted butter, and egg. Mix until a soft dough forms.
3. Knead for 8–10 minutes, then cover the dough and let it rise in a warm place for 1 hour.
4. Divide the dough into 12 equal pieces, shape into balls, and place on a lined baking tray. Cover and let rise again for 30 minutes.
5. Mix flour and water for the cross, then pipe a cross onto each bun.
6. Bake at 180°C for 25 minutes or until golden brown.
7. Warm the apricot jam and brush it over the buns for a glossy, golden finish.
